I’m not a Minnesotan but have ridden a few times recently in the Twin Cities when visiting my sister in St Paul. I highly recommend a loop through the lakes (Grand Rounds?) It’s also nice to ride along the Mississippi on both sides, Minnehaha Park, up and down Grand Avenue in St Paul from the river to downtown, down to Ft Snelling, and Battle Creek Regional Park. I also did a century loop that went west to Carver Park Reserve and looped around Lake Minnetonka. Just make sure you are going around the lakes in the proper direction (some one way cycle paths).
