Using that in-and-out route, you can also cut over to the circum-BWI trails and head down the trail all the way to Annapolis.
I’m thinking about riding up for the August Baltimore bike party, spending the night, then riding back the next morning…

OK, got this from my Brother-in-law this morning… besides riding and living in Baltimore, he is also a bit of a beer aficionado so I hope you like beer:
Riding the Gwynns Falls trail up to the edge of I-70 is nice and has some fun climbs. Some of it is pebbly woods trail which may not be suitable for a road-only bike, but it’s also nothing serious: http://goo.gl/maps/rybWK It’s a 20mi round trip.
For a quicky 12-mile round trip, Old Falls Rd. up to and around Druid Lake Park is nice:

The Ellicott Mills Brewing Company in Ellicott City is 12 miles away and probably worth a visit. Decent German food and good beer brewed on site. I see lots of road bikes on this route. Really fun getting there but you’ll definitely burn off the beer calories going back up the hill as you leave.

best of luck to her! If she wants good beer close by I highly recommend http://www.thebrewersart.com on Charles St. It’s a shame to drink anything other than their beers while there. The rosemary garlic fries are also to die for.
Oh wait I’m a dummy! Everybody loves the BWI trail; it’s quite nice. From the hotel to the trail, around, and back, is 28 miles. This would be my first choice if she’s never ridden the BWI trail.

ParticipantCoworker in the office here says that if you are in downtown Baltimore, then head north on Falls Rd or N Charles St and pick up Hillside Rd by 83/695 going west and then you’re out in rolling horse country!

Yup. I lived in Baltimore for 2 years, and this is what I would recommend. To get up that way I’d take Charles to University, University will kind of turn into Roland, take Roland to Lake, turn left on Lake and take that to Falls. Once you get out of the city on Falls there are a lot of really pretty, rolling roads without too much traffic.
